Another hybrid blade, this piece combines with heel width and edge curvature of a standard chef knife, but with the trailing point of a carving knife, and in doing so creates a really versatile tool.
The blade is forged from my Laminated steel, 410 stainless and an 80CRV2 cutting edge with natural forge texture left at the spine and a hand-finished bevel. The edge is very thin and hard, making this a great slicer.
Handle is stabilized heat-toasted curly maple. The heat caramelizes the sugars in the wood so that the brown color comes from the wood alone and not any coloring agents or dyes. And like most curly woods, you have to hold it to appreciate the depth and movement of the wood grain. The handle is octagonal in the Japanese tradition secured with black composite pins.
Knife comes with a leather blade sleeve.
