Damascus Santoku

The Santoku is probably the most versatile blade shape for general use in the kitchen. 

This one has a Damascus steel blade with a satin finished stainless collar mated to a beautiful piece of desert ironwood.  The offset octagonal handle is my favorite.  It has evolved over the years, this knife was made circa 2009.
